We do not write the menu. The land writes it and we take it down.

Three things decide everything here: what is in the ground now, how much time we can give it, and how little of it ends up in the bin.

Season

The menu lasts exactly as long as the produce does

We do not keep a fixed menu. When a grower finishes picking, the course comes off and the next one arrives. A guest who comes in March and a guest who comes in October eat two entirely different dinners. That is not an inconvenience, it is the point.

Waste

Nothing green goes in the bin

Skins, stalks, leaves and seeds all go back into the process. We ferment them, smoke them, cook them into stocks, turn them into oils and seasoned salts. Zero waste here is not a talking point, it is a routine the kitchen follows every morning.

Growers

Every ingredient has a name and a face

We work with small Hungarian growers who farm organically. We know their land, we know what they planted and when, and the crate often reaches the kitchen on the day it was picked. Each month we publish a conversation with whoever is currently on the plate.

Reservations

The table is yours for as long as the evening lasts

We are open Tuesday to Saturday. The last table is seated two hours before closing so the menu has room to finish.
